Quick Potluck Recipes

OH¦MY¦GOD.

It’s 3pm and you’ve just remembered that you have your boyfriend’s family potluck dinner in 3 hours! You’re panicked! What is a girl to do?! Instead of rushing out to the store to find the first prepackaged thing you can find (for his family dinner?! Girl¦really?!) Stop right there and have a look at our list of four delicious (and QUICK!) dishes that are suitable for whatever potluck duty has been dished out to you!

Appetizer – Puff Pastry Sausage Rolls

Basically one of the staples of the holiday appetizer table, it is incredible how often people opt for the freezer-aisle version of sausage rolls when the (mostly) homemade version is so simple and quick. Use fresh ingredients combined with frozen puff pastry for a delicious pre-dinner treat that will be on the table in under an hour. Bonus: you can pre-make these pastries and bring them with you uncooked, pop them in the oven for 20 minutes when you arrive at your party for a fresh, flaky and mouthwateringly warm experience!

Salad – Quinoa Salad

No one likes to be bored with your standard garden salad fare at a holiday party. Bring a little zest to your holiday potluck with a delicious quinoa salad, topped with a spicy cumin, coriander and paprika based dressing, and a dash of lemon juice. Mix in seasonal dried fruits like cranberries and apricots, as well as toasted almond, to make it a colourful affair that will match any hostess’ holiday decor. Ready in 45 minutes.

Side – Potato-and-Carrot Mash

Would you believe us if we told you that you could combine two perfect holiday-approved veggies into one delicious dish, all to be ready in just 40 minutes? Well you can with the awesomeness that is potato-and-carrot mash. Combining the two root vegetables with garlic, they are cooked to tenderness and then mashed the same way you would normal mashed potatoes (i.e.. with loads of butter and milk of course!). The result is a creamy smooth dish with loads of taste!

Dessert – Iced Egg Nog Cookies

Why is that the most delicious things sometimes take the most time of all? Well trust us, these cookies will be worth every last minute of the 2(ish) hours of work. We mean, really, does anything scream holiday deliciousness quite like a sugary cookie that is iced with the classic time-of-year taste of egg nog? No. Nothing. Don’t even bother trying. These will be a winner every time. Now get baking!
