Love those summertime cookouts but hate the summertime calories? We've got five classic summer recipes revamped to have you just as excited about your warm weather feasting without any of the guilt!
- 1 1/4 cup cauliflower, cooked and chopped
- 1/4 cup celery, chopped
- 1 hard boiled egg, chopped
- 1-2 tbsp light mayo
- 1 tsp mustard
- 1/8 tsp salt
- 1/8 tsp onion powder
- Pinch of pepper
- Sprinkle of paprika
Steam cauliflower until it reaches the same texture as cooked potatoes. Rinse in cold water to cool and pat with paper towel until dry. Chop the cauliflower into small bites and mix into a bowl with celery and eggs. Add mayo, mustard, salt, onion powder, and pepper. Mix well. Sprinkle with paprika. Chill for 1 hour before serving.
